Tex-Mex Chicken
Yield: 8 Servings
Ingredients
BBQ SAUCE
3/4 c barbecue sauce
1/4 c tequila
4 chipotle chillies in adobo
-sauce
1 tb the adobo sauce
3 cloves garlic; crushed
1 tb honey
1 lime; juice
CHICKEN
salt and pepper
4 boneless chicken breasts;
-split
2 tb vegetable oil
APPLE SLAW
1/3 c lemon juice
1/3 c oil
1 1/2 tb horseradish
1 Fuji apple; sliced
1 granny smith apple; sliced
1 Asian pear; sliced
1 yellow bell pepper; cut
in -strips
1/2 c chopped cilantro
gorgonzola cheese
Instructions
Sauce: In blender,
puree ingredients. In saucepan,
simmer 5 minutes. Cool.
Chicken: Heat outdoor
grill to medium-high. Salt
and pepper chicken. Brush
with oil. Grill, skin side
down, 6 minutes; turn; brush
with sauce. Grill 6 minutes;
turn; brush with sauce.
Slaw: Mix juice, oil,
and horseradish. Toss with
vegetables. Add cilantro.
Crumble cheese on top to taste.
