Vegetable Pakoras
Yield: 1 Servings
Ingredients
1 1/2 lb assorted vegetables
(e.g. 1 peppers, broccoli,
aubergine 1 green beans, young
okra)
1 batter:
5 tb chickpea (gram) flour
1 ts salt
1 ts bicarbonate of soda
1 ts cayenne pepper
1/2 ts ground cumin
1 chutney:
5 tb natural yoghurt
3 heaped tablespoons coarsely
1 chopped mint
3 heaped tablespoons coarsely
1 chopped corianders
3 oz creamed coconut
2 small, mild green chilli's
1 juice of a lime
Instructions
Mix all the batter ingredients
together, then add enough
water to make a thick and
creamy mixture (thick enough
to adhere to the vegetables);
about 50ml/2fl oz.
Cut the vegetables into pieces
then drop them into the batter.
Deep fry a few at a time in
hot vegetable or groundnut
oil. Drain on kitchen paper.
Chutney:
Blend all ingredients to a
paste in a food processor
and serve at room temperature.
